Chicken: Ginger Citrus Salad
Remember that shredded chicken that I made last night? Here's a perfect example of a well-rounded and easy to prepare meal that incorporates the chicken.

Citrus Ginger Salad
(makes 2 servings)

6 to 8 leaves romaine lettuce, chopped
1/2 cucumber, sliced
1/2 cubanelle pepper, sliced (a sweet, green pepper)
1/2 avocado, diced
8 oz shredded chicken, a little less than two cups
1 orange, peeled and chopped into bite-size pieces
some red onion sliced very thin
4 tbs Annie's Lite Gingerly Vinaigrette

1. Chop and dice ingredients as directed above.

2. Layer ingredients in the order listed above.

3. Enjoy!

How easy was that??

Note: You can use any ginger dressing you like. I like Annie's because it's all natural, low calorie, and comparably priced to any other dressing. And no, I don't get freebies.
