Brown Rice & Black Bean Burritos
(makes 4 taco-sized burritos - more than enough for 2 people)
3/4 cup plain brown rice (cooked)
3/4 cup black beans
3/4 cup water
package low sodium taco mix
1/2 avocado
1/2 tomato
1/2 cup shredded cheese
1/4 cup fat free plain greek yogurt
1/4 diced shallot (for extra kick if you want it)
4 whole grain taco size tortillas
1. Add rice, beans, water, and taco mix in a frying pan. Bring to a simmer and cook about 3 mins (this will get it to a nice thick, but not dry, consistency).
2. While that's cooking, chop avocado, tomato, and shallot.
3. Assemble
4. Enjoy!!
Notes: This'll take 10 mins start to finish. I made the brown rice yesterday. Saved me 30 mins today!
