Whenever I can, I try to make a bunch of stuff on Sunday. That way, lunches and dinners during our busy weeks, are that much easier. It only takes about an hour from start to finish. Totally worth it.
Today's list includes....
Sweet Potatoes
3 large sweet potatoes
1 tbs EVOO
salt
Chop potatoes into bite size chunks. Toss to lightly coat with EVOO & salt. Bake on a tinfoil-lined-cookie sheet (also spray with nonfat cooking spray) at 400 for about 30 mins. It lasts all week and is a healthy, filling, snack and/or side dish.
Baked Chicken
4 boneless/skinless thin chicken breasts
Montreal seasoning
Sprinkle a bit of seasoning on top of the chicken. Bake on a tinfoil-lined-cookie sheet at 400 for about 15 -20 mins (more if frozen). (Throw the chicken in the oven at the same time as the potatoes)
Brown rice
Follow box instructions for about 4 servings. No salt/butter though. It'll probably get used in other dishes so it will get seasoned later.
Salad Prep
Chop the following:
Broccoli
Red Pepper
Sundried tomato
Carrots
(really whatever veggies you have in the fridge)
Easy lunch once all the veggies are chopped up.
