Sweet Potatoes: Smoky & Spicy

Sweet potatoes are one of my favorite foods. My favorite way to cook them is by baking them in the oven. I literally eat them plain. We had taco night last night and I wanted a side to go with the tacos. I felt that plain sweet potatoes didn't quite match. But sweet potato with a little cumin and chilli powder sounded like a perfect pair for the tacos.













Sweet Potatoes
(serves 6 as a side dish, or appetizer)
(100 calories per serving, about 1/2 a large potato)

3 large sweet potatoes
1 tsp chilli powder
1/4 cumin

Preheat oven to 350 Degrees F


1. Cut each sweet potato into 8 pieces. In half the short way, then in quarters.

2.Roll each half in tin foil. 4 quarters in each tin foil package. You should end up with 6 foil packages.

3. Place on a cookie sheet and bake at 350 Degrees for 45 minutes.

4.Remove from oven and remove from tin foil packages.

5. Sprinkle potatoes with chilli powder and cumin.

6. Enjoy!




Note: if serving as an appetizer, cut each piece in half one more time to make them into bite-sized bits.
