1 teaspoon dijon mustard
1 teaspoon honey
1 teaspoon cider vinegar
1 tablespoon extra virgin olive oil
2 cups spinach
1 cup halved organic strawberries
2 corn tortillas
1/4 cup shredded cheddar cheese
1. Whisk dijon mustard, honey, vinegar and oil. Mix spinach and strawberries. Pour dressing over spinach mixture.
2. Place one corn tortilla in frying pan over medium heat. Spread cheese on top of tortilla. Top with second tortilla. Fry for about 2 minutes, then flip and cook for another minute. Cut into 4 triangles.
Bonus: This recipe is gluten free! Just make sure the brand of corn tortillas that you buy are gluten free.
