Power Breakfast: Fluffy eggs & Spinach
2 egg whites
1 tablespoon soy milk creamer
2 tablespoons shredded mozzarella
2 cups raw spinach
1/2 tablespoon olive oil
1. Heat olive oil in frying pan. Add spinach and cook until wilted. Remove spinach from pan.
2. Beat egg whites and soy milk creamer in a bowl. Pour into frying pan. Sprinkle with mozzarella.
Note: I cook the egg about 2 mins on medium heat. Then flip and cook less than one more minute. Cook to your liking.
3. Serve egg next to spinach. ( or you can just mix all ingredients in the pan to ale an omelet).
4. Enjoy!!
