Chicken: Baja Bleu Wrap




















As you may have picked up by now, it's winter in my neck of the woods. In years past, the Weber was packed up (or buried in snow) until May. This year I'm completely rebelling against the season. Nothing beats meat on the charcoal grill. Nothing. The grilled chicken in this wrap turned out so juicy and flavorful. Add a tiny bit of BBQ, some avocado, and (barely noticeably) low-cal bleu cheese. EXPLOSION of flavor. All for just 325 calories.Or if you're an athlete like my hubby, double up on the chicken, it's still only 445 calories.



Baja Bleu Wrap
(makes 2 servings)
(325 calories per serving if you use a 100 calorie English Muffin)
(285 calories per serving if you use a 60 calorie Pita Bread)

8 oz cooked and sliced chicken breast, preferably grilled (equates to 1 breast usually)
2 tbs BBQ sauce (I cheated and just used Kraft)
1/2 avocado, sliced
2 Laughing Cow Light Bleu wedges
2 large lettuce leaves
a few thin red onion slices
handful grape tomatoes
2 100-calorie english muffins (e-muff) OR 2 Joseph's Flax, Oat Bran, & Whole Wheat pita breads

1. Spread BBQ sauce on cooked chicken. Spread cheese wedge on e-muff or pita bread.

2. Stuff the e-muff or pita with BBQ chicken, avocado, lettuce, and onions. Serve tomatoes on the side.

3. Enjoy!

  1. I just discovered the Laughing Cow Blue Cheese and Chipotle. For 35 calories, the pack a lot of flavor. Lovely fresh wraps!
